Armadillo Eggs Appetizer
24 Jalapeño peppers (fresh are best, jarred are okay)
1 lb. shredded cheddar cheese
1 lb. lean sausage
1-1/2 cups of Bisquick® Original Pancake and Baking Mix
Split peppers and remove seeds. Wear gloves if you have sensitive skin. Stuff peppers with half of the cheese. Mix the remaining cheese, sausage and Bisquick together. Flatten the mixture like a hamburger patty. Fold this flattened mixture around each pepper like a shell. Bake at 350 degrees on an ungreased cookie sheet (325 degrees if using a glass dish) for 25 minutes.
