RV Recipes: Fajitas on the Grill

A San Antonio-inspired favorite, these grilled fajitas reflect the diverse flavor, vibrant culture and fabulous food of Texas. (Recipe courtesy of Evanne Schmarder of the RV Cooking Show.)

  • 3 - 4 cloves of garlic - roughly chopped
  • 1/2 c fresh squeezed lime juice (appx 4 medium limes)
  • scant 1/3 c (6 T) olive oil
  • 1 t salt
  • 1/2 t fresh ground black pepper
  • 4 T fresh cilantro - chopped
  • 1 large boneless/skinless chicken breast OR 1/2 pound flank steak OR 4 large portabella mushroom caps
  • 3 bell peppers - red, yellow, orange - seeded and cut into wide strips
  • 2 - 4 jalapeno peppers - seeded and quartered
  • 1 large sweet onion
  • 1 small can of chipotles in adobo
  • flour tortillas
