RV Recipes: Fajitas on the Grill
A San Antonio-inspired favorite, these grilled fajitas reflect the diverse flavor, vibrant culture and fabulous food of Texas. (Recipe courtesy of Evanne Schmarder of the RV Cooking Show.)
- 3 - 4 cloves of garlic - roughly chopped
- 1/2 c fresh squeezed lime juice (appx 4 medium limes)
- scant 1/3 c (6 T) olive oil
- 1 t salt
- 1/2 t fresh ground black pepper
- 4 T fresh cilantro - chopped
- 1 large boneless/skinless chicken breast OR 1/2 pound flank steak OR 4 large portabella mushroom caps
- 3 bell peppers - red, yellow, orange - seeded and cut into wide strips
- 2 - 4 jalapeno peppers - seeded and quartered
- 1 large sweet onion
- 1 small can of chipotles in adobo
- flour tortillas
